Slow Cooker Butter Chicken


Vegan Crockpot Chili

Chipotle Chicken Burrito Bowls:
For the chicken:
1 pound boneless skinless chicken breasts (or chicken thighs)
1 cup chunky salsa
1/2 teaspoon chipotle chili powder

For the rice:
2 teaspoons coconut oil
1 cup dry short grain brown rice
2 cups water or vegetarian broth
1 small lime, juiced

For the corn salsa:
1 cup organic sweet corn
1 small red onion, diced (or about 1/2 cup diced red onion)
1/4 cup fresh chopped cilantro
1 small lime, juiced
Freshly ground salt and black pepper, to taste

For the beans:
1 (15 oz) can low sodium black beans, rinsed and drained

To garnish:
1/2 cup cheddar cheese shreds (dairy free if desired)
For garnish: Extra salsa, avocado slices (or guacamole), jalapenos if you like spice, cilantro, greek yogurt, hot sauce, etc

Slow Cooker Butter Chicken:
2 pounds boneless skinless chicken breasts
1/2 sweet yellow onion (diced)
3 teaspoons jarred minced garlic
1 tablespoon red curry paste
2 teaspoons curry powder
1 teaspoon salt
1 teaspoon turmeric
1/2 teaspoon ground ginger
14.5 oz can coconut milk
6 oz can tomato paste
2 tablespoons butter
1/4 cup heavy cream
2 cups Basmati Rice

Slow Cooker Pork Chops with Creamy Herb Sauce:
2 pounds bone-in pork loin chops
1 tablespoon olive oil
1 tablespoon butter
1/2 small yellow onion (diced (or about 1/4 cup))
2-3 cloves garlic (minced)
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon dried mustard powder
1/8 or up to 1/4 teaspoon pepper, depending on taste
1 1/2 cup chicken broth
3/4 cup heavy cream
1 tablespoon cornstarch
1 teaspoon freeze dried parsley
1 teaspoon freeze dried basil

Slow Cooker Chicken Curry:
4 Cloves Garlic Peeled and chopped, or frozen, ready prepared
2 tsp Fresh ginger Peeled and grated, or use a ready prepared paste
3 tbsp Medium curry powder
1/2 tsp Chilli flakes
1/2 tsp Salt
100 g Mango chutney
400 ml Reduced fat Coconut Milk
1 Large Onion Peeled and very finely chopped, I use frozen ready prepared
1 kg Boneless, skinless chicken thighs
1 tsp Garam Masala

Slow Cooker Honey Garlic Chicken:
⅓ cup honey (115 g)
¼ cup low sodium soy sauce (60 mL)
4 cloves garlic, minced
1 tablespoon ginger, minced
½ teaspoon red pepper flakes
½ teaspoon black pepper
4 skins on chicken breast, cut in half
2 cups baby carrot (245 g)
1 red bell pepper, thinly sliced
2 cups broccoli floret (500 g)
Salt, to taste

Vegan Crockpot Chili:
1 medium onion, chopped
1 medium green pepper, chopped into small pieces
4 cloves of garlic, pressed (or finely minced)
3 cups of vegetable broth
1 15 ounce can of tomato sauce
1 15 ounce can of diced tomatoes
1 15 ounce can of kidney beans, drained and rinsed
1 15 ounce can of great northern beans, drained and rinsed
1 15 ounce can of black beans, drained and rinsed
1 tablespoon baking cocoa
1/2 teaspoon of black pepper
1/2 teaspoon of chili powder
1/2 teaspoon of oregano
1/8 teaspoon of cayenne pepper
1 cup of frozen corn (added in later)
Salt to taste (I like this without any salt at all but add as desired)

Slow Cooker Spaghetti Bolognese:
1 tsp olive oil
6 bacon medallions, chopped
2 onions, chopped
5 g garlic, pressed
1 kg 5% steak mince
500 g passata
2 carrots, chopped
1 tbsp cornflour
175 ml wine
1 tbsp mixed herbs
½ tsp black pepper
