Arroz Con Leche | Mexican Rice Pudding Recipe

1 1/4 Cup Long Grain Rice (I used Kroger Brand)
2 3/4 Cup Water
3 Cups Milk (Use the Milk of your choice)
1 Can of Evaporated Milk
3/4 to 1 Cup Of Sugar (I used cane sugar)
2 Mexican Cinnamon Sticks
1/4 to 1/2 Cup Raisins
1/8 Teaspoon Salt (or use half of the 1/4 Teaspoon to measure)
If you are using Cinnamon powder start with 1 Teaspoon. add gradually when it’s all cooked to achieve your desired cinnamon flavor.
You can add condensed milk (Lechera) to your milk base
You can also use orange or lemon zest for added flavor to your milk bast. Make sure to remove before service as it can get bitter
You can also add your choice of fruit to the milk blend. Such as Mango, banana, Strawberries. The options are endless friends.
Make sure your rice is not fully cooked and also not hard when you bite it. If you have a hard consistency before you add it to your milk. The hardness will not disappear. Make sure the texture is to your liking before you add the rice to your milk.
If after you cooked your rice. You don’t have enough milk. You can start by adding 1 Cup of milk at a time with 1 Tablespoon sugar. That way you still have a milk base with the sweetness we all enjoy from Arroz con leche.
I’ve made this recipe many times and will say this. It will depend on your rice and also on your energy. Make sure to listen to your favorite jams or watch your favorite friends.
