French German pizza (Flammkuchen/ Tarte flambée) German recipe #21 法式德式披薩

Flammkuchen or Tarte flambée called in French is a delicious thin pizza from Alsace and South Germany. It’s one of many things I discovered after moving to Europe. Unlike the traditional Italian pizzas, Flammkuchen dough is made without the yeast, which saves a lot of time to knead and rest. The pizza sauce and toppings are also relatively simple.

It’s definitely one of my favourite street foods.

pizza dough –

400g flour (type 550)
4 tbsp oil
1 tbsp salt
125g buttermilk
100ml water

toppings –

200g quark
100g cream fresh
1 egg yolk (optional)
salt
pepper
nutmeg

red onion
smoked bacon
