Cauliflower rice or cauliflower couscous is a great low-carb substitute for grains on the Keto or Paleo diet. Plus: Two easy cauliflower rice recipes – chorizo pulao and mushroom “risotto” – that can be an accompaniment for curries or eaten on their own.
Rice is definitely one of the things I miss the most on the Ketogenic diet, particularly because, as Indians, we tend to eat a lot of curries and on the diet you have nothing to mop them up with. This cauliflower rice or couscous makes a fantastic neutral substitute – it also has none of that off-taste you’d associate with boiled cauliflower.
