Coming up again with few meal prepping hacks for indian dishes. Everything to do with simple ingredients (tomatoes and onion) . How awesome is that 🙂
HACK 1 – Freeze in mason jar if you are particular about using ziploc, I like to pulse it so that When I use it for rasam or soups, it gives a good texture
HACK 2- Use bottle to refrigerate cut tomatoes, It safer and seals better. I often use it for my sandwiches or my ready to eat upma mix.
HACK 3 – The same with sauted onion tomato paste, no need to add any spice or flavor. In that case it can be versatile. Also if you are skeptical about storing cut onion or cooked onion. Please feel free to exclude this.
HACK 4 – The gravy base can be portioned based on family size, we are a family of 3 (2 adults) so my portion size are smaller. Do leave a comment below to know how to freeze big batches.I have used this for paneer butter masala, dum aloo, channa masala, matar paneer, few spices and ingredients change which can be included later.
I did instant pot, pot in pot method with the vessels I have 🙂 you can of course increase the quantity if you have better space saving pots.
Recipes I used
Lemon rasam –
Paneer butter masala –
note – I used same recipe but different technique to make gravy in instant pot. the same idea can be translated to traditional pressure cooker
