– 70g brown sugar
– 125g soysauce
– 80g mirin (Japanese cooking wine)
– 2 garlic cloves (about 7g)
– 1/2 teaspoon grated ginger (about 4g)
– 35g rice vinegar
– 1/2 teaspoon gochujang chilli paste
– 50g water
– 1/2 teaspoon sesame seed oil

– 150g tempura batter
– 60g corn starch
– 10g shichimi 7 spice mix
– 8g salt
– 240g water
