Tomato Rice Bhaat Recipe – One Pot Meal – Lunchbox Special

Tomato rice is a simple, tangy and spicy medley of a tomatoes, a few spices, onions, lentils (for crunch and flavour) and of course, Rice! It is a mouth-watering combination of staples that doesn’t grow old. I’ve made tomato rice several times before and I’m not joking, but it feels like the dish is incomplete without drinking a cup of hot tea. I have tried it without tea, but I am somehow left unsatisfied when I dare to do so. Beats me!

Oh well, I’ve passed on the recipe and done my part. Now it’s up to you! Will you be craving for a cup of tea, like me? Or will you wash it down with just some water and the customary raita or coconut chutney on the side? Only time will tell. (*wink*)

Here’s a quick look at the ingredients:

1) Tomatoes – 4
2) Onion – 1 1/2
3) Curry leaves – 10-12
4) Coriander leaves – handful
5) Green Chillies – 6
6) Ginger – 1 inch piece
7) Groundnuts – 2 tbsp.
8) Channa Dal – 2 tsp.
9) Urad dal – 2 tsp.
10) Hing – 1/2 tsp.
11) Turmeric – 1 tsp.
12) Red chilli powder – 1 1/2 tsp.
13) Cumin seeds – 1 tsp.
14) Mustard seeds – 1 tsp.
15) Cooker rice – 2 cups
16) Salt to taste
17) Oil – 2 tbsp.
