Vegetable Upma is a South Indian vegetarian breakfast recipe. It is made using upma rava as the main ingredient and add vegetables like carrot, beans, green peas for added flavor. It is also eaten with sugar or Coconut chutney or sambar.
Water (4 cups of water for 1 cup of rava)
Heat Ghee in a hot pan and fry Upma rava to a vey light color. take if off the heat.
Heat pan and add Oil, Mustard Seeds, Chana Dal, Urad Dal, Cashew nuts, Green Chillies, Green peas, Carrot, Beans, Onion, Curry Leaves and Salt. You can also add tomato to the vegetable upma which gives a tangy flavor. If you are adding tomatoes you need to add water accordingly.
After the vegetables are cooked add water, 4 cups of water for 1 cup of rava. Cook till the rava is cooked soft.
Serve with Sugar or Coconut chutney or hot sambar.
